About three weeks ago I had a break through moment. I tweeted and talked about it and started cooking up healthy ideas. I feel much better in my clothing too. So with eating well we get to dress well and basically just feel better. So excited about bringing three of my passions together, cooking, designing and feeling awesome! The realization that these things actually do go together is very exciting for me.
Yesterday I made a simple lower fat version of Pesto. 1.5 cups of spinach, .5 cup Basil, tablespoon chopped garlic, 1 teaspoon of lemon juice, 3 tablespoons of Olive Oil, salt and pepper to taste. Put in food processor and add water if needed. Try and keep it thick, so you can use it for a marinade or in a salad, yummy.
